We made a game day decision on our first family trip to skip AK and do anothrr MK day instead. Totally worth it but we want to be sure to hit it this time (my niece was 5 at the time and reminds sis that we have not seen this park).
I know Expedition Everest is the main coaster and there is a water ride. But beyond those and the safari ride, i need some direction.
It looks like they will have evening things now.. (our trip isn't until next year but seeing sis on person for july 4 so this will be topic of conversation).

Finding Nemo show is AMAZING! Best show at Disney IMO.
Lion King show is pretty awesome too.
AK also has some characters that only meet there (Pocahontas, Baloo/King Louie, Flik, etc)
The Dinosaur ride can be scary for a lot of kids so I know lots of people that skip it (we definitely do). You can probably skip the entire Dinosaur area if you are short on time. Its basically a dinosaur dumbo, the dinosaur ride, and some spinning ride like at a carnival and then a bunch of carnival games.
There is a ton to do at Animal Kingdom. The Safari is more than worth your time, especially early in the morning (or now in the evening, which will be new).
The Lion King and Finding Nemo shows are both awesome and should not be skipped.
Our whole family liked Dinosaur, though it was scary.
I really recommend the Wilderness Explorer books. My kids (4.5 and 8.5) got really into getting the badges, and it gave us a way to direct our efforts on the trails, which I think are worth your time (though many people skip them).
We were so busy with these things that we didn't make it out to Rafiki's Planet Watch, but I would have liked to.

Definitely FP the Safari ride, because the line gets insane. DS and I loved the Festival of the Lion King. He still talks about it. Nemo was great, but fair warning, if you do it midafternoon, you may have a hard time not nodding off because its so comfy and dark in the theater. DS also loved Dino-land and Primeval Whirl was his favorite ride at AK. We also didn't make it out to Rafiki's Planet watch, just too busy that day. Its Tough to be a Bug is cool, but it may be a little dark for little kids. We skipped Everest and Dinosaur because DS was scared to do either.
Also, I have heard good things about the play area in dino land, but we didn't have time to do that either.
Oh, get there before rope drop because they have a bunch of beautiful exotic birds fly around in a short little presentation just before rope drop. Its pretty cool.
