Adults only trip. H arrives Friday. I get in early Wednesday but don't have work commitments. Staying at Yacht club.
Current plan:
Wednesday: ? Thursday: work during day, EPCOT night Friday: work morning, HS afternoon/evening Saturday: work, event at HS that night Sunday: MK all day Monday: EPCOT all day
No park hopper. I was thinking AK originally but since ROL isn't going yet IDK if a solo day there is worth it.

If you aren't committed to any specific park, I would look at the crowd calendar and decide based on whether its a good day for AK or a good day for MK.
Crowd calendar says AK will be most crowded, MK medium crowded, HS least crowded.
I'm leaning MK, which also has evening EMH. I just don't think AK would be all that fun alone without the light show going yet.
Question: if I don't have PH, can I still leave MK and re-enter MK if I want to go back to the hotel for a work happy hour then head back to the parks?
I actually think AK would be way better alone. There are two great shows, EE has a single rider line, Safari seats are rows, you could take your time on the trails... I think MK would be a lot of line standing and riding by yourself.
I would likely go MK or Epcot. I'd have a hard time not springing for hoppers since you're staying on the boardwalk.
Maybe take a break from MK and ride the monorail over to the Poly to have a drinks/apps at Trader Sams? I'd also make sure I squeezed in some pool time.
I do love the AK but alone and w/o the night time stuff, I wouldn't bother.
If HS has Fireworks that night, I'd do HS. You can walk from Yacht/Beach Club. You'll love the location. We're just leaving Boardwalk and really liked the location.
I'm so glad to hear this, we are staying there next trip! I don't want to hijack but would love to know more. Will you write up a trip report, even if brief?

She's already doing 2 nights at HS. A third would be overkill.
I do love walking to the studios & epcot from the boardwalk area resorts, though. They're my favorite places to stay. I also love using my hopper to walk through epcot, grab dinner, take the monorail to MK. OR leave MK late, kids fall asleep in stroller, use the monorail to get to Epcot, walk through epcot w/ sleeping kids...grab drinks, dessert, wander, etc. and walk over to your room.
