You've got everything I've taken for a day in the parks except something to entertain the kids during lines. I sometimes take little toys/books for them to look at in the event we get stuck--like we did in January on Star Tours. The line said 10 min, but then something broke down and we ended up in there much longer than we anticipated.
Mole skin is always good to have in the bag, along with some bandaids.
We also took two small umbrellas - if we were standing in a line with no shade, we would bust those out for some relief. We're delicate flowers, though. lol
Bring a big towel! We have been rained on a few times this week and it has been nice to have a big towel to dry things off after a downpour (us, the stroller, etc).

Having a rain cover on ours was great for the unexpected florida downpours that occurred. We forgot to put our cover on when we went into an attraction at HS, and our stroller was totally soaked and took forever to dry after that. We never forgot to do the cover, just in case, the rest of the trip.
Grab a mister fan if you can. We were blessed with"mild" weather the first weekend in May but I know it is hot now. Also doubles as kid entertainment.

Honestly, I am not sure why anyone going to the parks when it is hot doesn't use a mister fan, one of the little battery operated fans that you can wear around your neck, or a cooling band. Any of those really help. We've only used mister fans when we've had kids with strollers around, because none of us want to carry them around, but the other stuff is all easy enough and makes a difference.
