I'm overwhelmed. We're going to be at WDW for 5 days, 2 at MK, 2 at Epcot, and 1 (short) day at AK.
The only thing I know I want to do is Crystal Palace for breakfast. I'm thinking maybe breakfast for Chef Mickey's. We are staying at AoA, so we have a small fridge and can do breakfast in the room the other 3 days.
Is there anything else that is an absolute must do? I would strongly prefer that we do breakfast-if it was lunch/dinner it needs to be in a place that doesn't serve alcohol (though since we're doing AK on our last day and driving home, maybe Tusker House would be an option for lunch). Our ADRs open up soon and I'm sure we'll eat dinner outside of the parks at least once. DS is a big breakfast eater and doesn't eat a lot for lunch or dinner. I know that if we do Chef Mickey's, we won't need much for lunch that day.
Thoughts? How many ADRs would you do? I'm trying to do all of this with budget in mind too.

Typo? Or are you only wanting to dine at restaurants that are booze free? If so you will be limited to MK dining.
If you will have a car and are willing to drive off property check out the Columbia Restaurant in Celebration. They have great food and it is a nice escape from the parks.
How many table service meals do you want to do, vs quick service? Aside from BOG dinner, none of the restaurants in MK serve alcohol, but I think they all do (or most do)in other parks. Are you doing breaks, or staying in the parks all day? I'm someone who likes to stay in parks all day, so I wouldn't want to spend time travelling to restaurants elsewhere, b/c that can eat up a good chunk of time.
If your planning on chef Mickey's on an MK day - I wouldn't do it b/c I wouldn't want both of my MK days to start w/ breakfast unless they are super early pre rope drop. So, the timing matters.
Like PPs said, most (all?) places outside of the MK have alcohol.
My favorites were Sanaa and O'hana. BOG dinner was just okay. I found the food at Chef Mickeys to be pretty underwhelming for the price. Cinderellas table was fine for breakfast but food was nothing too special.
We've had a good lunch at Akershus in Epcot, but our favorite thing is to just snack and drink around the world there - we did that at least two nights each trip but it's usually during one of the Fests.
Everywhere has alcohol except MK, with the exception of BOG dinner as others mentioned.
We've also had good meals in Celebration - at the tavern though. Or they usually have a food truck night the first Friday of the month.

What hotel are you staying at?
The only park we're 100% set on is AK on our last day, so I can arrange anything else as needed. I guess it'd be better to do Chef Mickey's on an Epcot day?

I'm guessing we'll stay in the parks all day-or may cut a couple days early. Once we're done though, I'm pretty certain we won't go back to a park. I briefly talked to DH last night about all of this and he thought 2-3 table service was plenty. We're both in agreement that if we do a big breakfast, we'll just get snacks for lunch (or bring them).

No, I think that's even worse b/c then you have to get all the way over the Epcot after. It's definitely a MK day restaurant. Like I said, if you are getting an early reservation and you'll still get over to the MK by rope drop, I think it's fine. Or if you just don't care about that stuff - I'm just not willing to waste 2 rope drops or 1 hour of park time in the early AM for breakfasts.
But we also usually only do one character meal per trip, so that colors my view. Both are great places.
Akershus for breakfast on an Epcot day is a good idea, though, or Tusker house at AK that day if you are looking for character breakfasts.
We only did 1 character meal - Akershus in Epcot for lunch. We pretty much focused on a big sit-down lunch. When we ate from our resort foodcourt at dinner, we took it out by the pool.
We did grocery delivery from Garden Grocer. We took snacks in with us every day.
Our meals were: Day 1 (arrival) - dinner at Portobello in Disney Springs Day 2 (MK) - breakfast in room. Lunch at Pinocchio Village Haus in Fantasyland. Dinner at O'Hana at Polynesian [reservation]. Day 3 (Epcot) - breakfast in room. Lunch at Akershus [reservation]. Dinner at resort foodcourt (we stayed at All Star Music). Day 4 (MK) - breakfast in room. Lunch at Pecos Bill in Frontierland. Dinner at resort foodcourt. Day 5 (AK) - breakfast in room. Lunch at Rainforest Cafe in AK. Dinner at resort foodcourt. Day 6 (HS) - breakfast in room. Lunch at Prime Time Cafe in HS. Dinner at resort foodcourt. Day 7 (MK) - breakfast in room. Lunch at Liberty Tree Tavern in Liberty Square. Dinner at Contemporary food court. Day 8 (departure) - breakfast at resort foodcourt.
