I have been researching and looking and researching some more.
Its almost time for me to bite the bullet and book something or atleast decide when we should go.
I think I am going to try to rent DVC points so I still have some time before I need to do that. I am thinking I would like a studio at either Animal Kingdom or Poly.
Which month would you aim to go?
April (near the end not spring break or Easter) (we would celebrate my sons 5th birthday) May August October November
I would like to be able to use the pool/not be freezing.
Do either of these months have a better rental success rate?
I believe all the crowd calendars say these times are fairly low.
Am I missing something?
Other factors - we are a party of 5 (youngest will be 1 this September, middle is turning 3 at the end of June - young family)
No freezing in any of the months that you listed. We had 'the two days of winter' in Feb. 2015, and this year we had 2 weeks of winter, spread out over 3 weeks or so. That's about it.lol
November would be my first choice, then April or October. April could be quite warm, and October might be about the same, but both are much, much better than May or August.

We overheard some Florida locals at Epcot talking about the 'cold' winter this year, and one woman commented that she actually wore capris instead of shorts for a few days there. lol
This past November was pretty warm. I have no doubt that shorts and swimming would not have been a problem. I think we even wore shorts on Christmas. In my opinion, it was all kinds of wrong. ;p
Do you think if I booked April there would be AK Value Studios left since it is less than 11 months out?

Also, how many days can you get for DVC rentals? Is it easy to ammend your request? Aim low?
Maybe not Value Studios because there are so few of them, but I booked regular AKL studios at 5 months last year and 7 months this year. There's no premium to booking before 7 months at AKL at dvc rental store because it's a non-premium resort. They have you select four potential options on their form, I think (and I changed one of them after submitting the form because DH apparently really like Kidani instead of Jambo at AKL but never mentioned this to me, LOL). When the first day of our projected dates weren't available, I just had them book the remaining days and I booked a regular hotel room for the first night. They were pretty flexible. But once you pay for the points, you are locked in (they have some kind of cancel-for-any-reason plan, but I got trip insurance instead). When I sent in a request through David's, they just replied with "Not available" and didn't really invite any back-and-forth. You can book as many nights as you want, I think, as long as there is availability and they have points with which to book (i.e., between 11 and 7 months, they can only use points from people who own in that particular resort, I think).
We wore shorts every day in November last year. We didn't swim, but that was because we were dumb and didn't block out any pool time.

Do NOT go in August. That is my advice. It is HOT, humid and there were a lot of bees.
We are looking at November 2017 as a possibility. We are from the cold mid-west so I think we could probably swim any time of year in FL but it seems like November is still pretty warm. Some friends of our went in Oct a few years ago and said it was close to 100. I looked at some average temp calendars and the actual temps compared to average are all over the place. I think I looked in Feb when the average high is 72, but the actual high temps from the previous year ranged from 55-85 over a 5 day span.
We took twin 15 month olds 2 years ago. We only spent 3 days in parks (2 in MK and 1 in HS). They were not really good walkers yet (and there were 2 of them) so I was happy about just doing 3 days. One thing I didn't realize is that there is stroller parking. So, you might have to park your stroller a good distance away from the line for the ride (possibly not a big deal if only 1 kid isn't walking well). They did pretty well at MK and rode Dumbo, Peter Pan, Winnie the Pooh, Little Mermaid, and the Tea Cups. They also did the Great Movie Ride at HS.
Given you have options, I would absolutely choose April/May over October/November. I found it really hard to deal with the party schedule and F&W last year.
