H just got back from a fishing trip in Alaska, so we've been doing a lot of salmon (came home with 20lbs!), halibut (35lbs!!) and rock fish (5lbs). Our go-tos are fish tacos with the halibut or rock fish (homemade pico de gallo, slaw, black beans, avocado/peach salsa) and salmon sliders (with caremlized onions on Hawaiian rolls - SO good!).
For easy nights (especially nights we're leaving them with a sitter) H has been making this mozechili casserole. I don't eat meat so I can't attest to it, but H, the kids, and their sitters have raved allrecipes.com/recipe/11893/mozechilli-casserole/
InBetweenDays, salmon sliders sound tasty and fun (yay for Alaska fishing trip, I've always wanted to go on one). I need to better my salmon cooking skills. I"m not very good with seafood cooking besides shrimp or a crab dip here and there lol

I feel ya, I've had a hard time coming up with meals lately too. I ended up subscribing to the Cook's Country/America's Test Kitchen website and it's really helped. I've never had a recipe that was bad (so I don't worry about hating or ruining it) and helps with some inspiration.

This is for the next 2 weeks. We'll have a night of leftovers and a night of going out. Burgers (beef for H and DD, turkey for me) Flat bread individual pizzas and salad Tacos Salad and grilled steak Grilled green beans and grilled chicken Spaghetti (with spaghetti squash for me) Salad and chicken meatballs Roasted broccoli and panko baked chicken tenders Taco soup Chinese salad w/rotisserie chicken
I'm *always* in a food rut, which is made worse by the fact that I'm attempting to diet again (although I just pouted and gave up counting over the past weekend). So not only am I challenged by food rut, but trying to come up with a meal that's easy to cook/prep after work when we're tired and that's around only 350 calories for me and filling.
Some of our go-tos that aren't TJs frozen stuff marinated veggies grilled & served over rice curried cauliflower
