Epcot opens early one day for us. The day I planned to do Epcot with akershus breakfast. Is it silly to do breakfast that day? Should we do the EMH or go to another park because it's busy? What's the strategy with EMH?

We avoid them. Don't do an 8am breakfast on a day the park opens at 8am. You basically come out of breakfast and the park is already crowded so you lose any rope drop no lines chance.

Also if there are extra magic hours, how long would you assume you could skip fast passes because short lines? Normally if you arrive a rope drop, the first 1-3 lines could be short enough to skip FP? Same thing with EMH?

We always do early EMH and it's great. If a park opens at 8 am (EMH from 8-9 am), you can do a ton of things in the first 2-3 hours. We usually visit an EMH park from about 8-11 am, at which point it's usually getting busy, and then we take a lunch/afternoon break before heading to a different park in the evening. I probably wouldn't do an early breakfast on an EMH day though. It kind of defeats the purpose.
