I'm presenting at a conference in Orlando and going to fly my husband and son (who will be 20 months at the time) for a weekend following the conference.
Staying at the yacht club, we will have two full days to explore- a Friday and Saturday the first weekend in December. I have a free park hopper for myself.
Which parks would you visit? We will surely visit Disney when he gets older- I've been there before but not since AK was not in existence.
Suggestions for toddler friendly meals?
Anything else that would be good for a toddler?
I've been following the boards and checking out some websites suggested here but it's so overwhelming.
I would do one day at Magic Kingdom and one day at Epcot (pretty much under any circumstance unless you have a child that really likes animals or a particular movie). Those are (in my opinion) the best parks and the others are just bonuses for people staying longer.
According to the crowd calendar (wdwprepschool.com/december-at-disney-world/ ) that Sunday is a Mickey's Very Merry Christmas Party which is a separately ticketed (and frankly pretty expensive) event so Magic Kingdom closes early (7 p.m.). With that in mind I'd hit up MK on the Saturday and Epcot on the Sunday.
I went to both parks with my then 15 month old and we spent a lot of time in Fantasyland at MK. For meals at MK we liked Crystal Palace but even with a reservation the wait was long. For Epcot we had a great lunch at Biergarten because we let the toddler run around in front of the stage and the food was good. It's also loud enough in there that you're not anxious about toddler antics.
If you have park hoppers, I rec going to MK the day of the holiday event. MK was a ghost town that day bc no one w non-hoppers wanted to waste it on a day the park closed early.
If you all have hoppers I would do 2 days at MK 1 evening at Epcot.

Saturday do MK morning & evening with a break/swim in the afternoon. Sunday finish up at MK in the AM and then after a break do Epcot. You can monorail from the MK to Epcot anytime and walk through Epcot to the hotel if you have hoppers.
Would your child enjoy a character meal? Since you're at the Yacht club it would be very easy to do the beach themed character breakfast at Cape May.
You definitely need to do MK, at last for one day. I have an animal obsessed son, so when we had limited time at the parks we had to fit AK in so that he could do the safari and walk the trails, but if you don't have that, I'd definitely consider doing the other day at Epcot, since it's so convenient to your hotel. You could do a MK/epcot split the second day, ending with a World Showcase dinner.
When we took our boys at that age, they were great about napping in the stroller, which was nice for DH&I. We pushed the stroller around the showcase and tried the different foods and drinks while they snoozed
