You'll want cash probably for tips for meals, unless you plan on charging them to your room.
We've started buying Disney gift cards every week and we're going to use them for dining tips, alcohol, souvineers, extra snacks, whatever. I don't want to charge a ton on our upcoming trip, so we're going the gift card route.
There's a website somewhere where you can combine gift cards so you don't have to carry around a ton of them.
Once you are there with a ticket, it's just whatever you want to eat & anything you want to take home. It's why I like the meal plan at WDW, my Magic Band gets swiped & everything is already paid for! In theory, if my card is linked to it, I don't even think I'd need a wallet aside from ID for booze at Epcot!

You will just need money for tips (they aren't included in the dining plans), any extra food that is not on the dining plan, and souvenirs. I keep a credit card attached to my magic band, so I just charge all of this back to the room.
Oh, I also have envelopes for mousekeeping that I leave money for them in and have some cash for the bell hops when they take our luggage so we can get on the bus back to the airport at the end of the trip. Both of these are cash.
Oh, and if you want any of the light up things or trinkets from the street vendors at the parades, you need cash. We found out the hard way they couldn't scan our magic bands and DH and I didn't carry any cash on us that day.
Booze, extra snacks or meals not on the dining plan ( this isn't and issue when my H isn't with us, but my H can out eat the dining plan NO PROBLEM), Mousekeeping tips, tips for Magical Express Guy, cab fare if you choose to take one ( or just take an uber)
On the boardwalk and in Epcot certain snack and drink stands DO NOT take Magic Bands.
