MK- Peter Pan, BTMMR, 7 Dwarves ( maybe next time Space Mountain, he will be tall enough but is afraid of the dark. ) Epcot - FEA ( because I really think FP plus is the ONLY way to go with this one rn) UNLESS tesk track is a super duper high priority for you, Then Space Ship Earth. HS Star Tours, TSMM AK- Everest, Safari.
Our strategy is to book three morning FPs for the first three hours of park open. On our last trip (Labor Day) we were easily able to book great 4th, 5th, 6th and more FPs for the remainder of the day. One day in MK we had booked at least a dozen FPs. Once you scan in the line, immediately book your next FP or move up the time of your next scheduled FP. We rode 7DMT four times in one day using this strategy.
MK: 7DMT, Peter Pan, BTMRR, Space Epcot: Soarin or TT at rope drop, FP for Frozen AK: Everest, Safari, Kali (if the weather is hot) HS: TSMM (now that the 3rd track is open, it is an easy FP to get), ToT, Star Tours

Krystee...We just went rouge at Epcot. It's our first day there and the only FP availability was after 5:30. Sooooo....We're going to chance Frozen at rope drop and just deal with the line. It is EMH that morning, so I'm hoping the line will be a little less than it might be on a regular rope drop. We ended up FPing Soarin and Test Track for one adult + one kid and we'll use rider swap for the other adult and other tall enough kid. I did Spaceship Earth and Character Spot for all of us.
For HS I ended up doing Toy Story (all), Tower of Terror and Star Tours (one adult + kid for each, using rider swap) and Frozen Sing Along (all).
MK day 1: Peter Pan (all), Mine Train (all, but we'll have to use rider swap), Space Mountain (all, again with rider swap).
AK: Kilamanjaro (all), Primeval Whirl and Dinosaur, River Rapids and Everest (all for one kid + adult, use rider swap for other kid and adult)
MK day 2: Pirates of Carr (all), Jungle Cruise (all) and Mine Train (all).
Definitely take advantage of having the little one and use rider swap to maximize your FP wherever possible. Epcot is the best place to do that if you want to chance (or don't care as much) about Frozen.

Epcot is SO hard if you want to get Test Track, Frozen and Soarin' in. I would FP Frozen and then do Soarin' at Rope Drop (get a rider swap pass) and then single rider for Test Track. Or if you have more then 2 adults/people tall enough, do Soarin' at RD and get your rider swap and then don't use it and book it over to Test Track and ride it + get rider swap.

Anna and Elsa usually only have 20ish minutes waits throughout the day. And often Soarin's wait is lower at various points throughout the day and people have reported 5-10 minute waits for the first 15-20 mintues of the day.
We have a child under the height limit so we got FP's for Soarin' and Test Track on the same day and will use rider swap. If that is an option for you, you might try it. FEA FP+ is hard to get for the time you want, they only had later afternoon when I did it and it was like 62 days out.
What did you end up booking? I have to book mine on Sunday and our kiddos are the same age so I'm curious what you went with
I'm so nervous about booking these FP's, its ridiculous! And I've been to Disney probably 15 times, but never where you could do all this beforehand stuff.
nextbigthing we book next Wednesday. We are doing Frozen at Epcot and Mine Train and Peter Pan at Magic Kingdom and Toy Story at Hollywood Studios and the safari at Animal Kingdom. I still have to figure out the rest!

We did:
AK: safari at rope drop, And FP Lion King (great seats), Kali river Rapids (bypassed a huge line) and Expedition Everest (worth it)
Epcot: Frozen (DEF worth it. Standby for Soarin was only 20 min) and the rest of the FP options are pointless for us but we did Turtle Talk and Nemo. Both were totally unnecessary.
MK: day 1: 7DMT (def necessary if you want to ride. We were in and out within 10 minutes), Peter Pan (necessary) and Enchanted Tales with Belle (we didn't use it)
Day 2: M&G with talking Mickey (worth it), Buzz Lightyear ride (prob not necessary) and Tinkerbell M&G (not necessary but nice to have)
Hollywood Studios: Toy Story (absolutely necessary, wish I could've gone on again), Frozen sing a long (pointless), Disney Jr (unnecessary). I hate the FP system there too

Ok, I just booked this morning, it was pretty easy
We aren't doing roller coasters (both my dad and I have back issues) and we're traveling with a toddler
MK: Peter Pan, Dumbo, Pirates Epcot: Soarin, will try to do Test Track before that, Living Seas and Spaceship Earth AK: Safari and Lion King HS: Toy Story (I LOVE this ride but we may or may not use it, this is our last day and we may just go back to MK)
