There is probably a website that includes a list or assessment. My daughter is tall so I don't want to strictly go by height. Seven dwarves - what age? Soarin? Test track? Any other rides besides space mountain that are a little scary or bumpy? I don't want to waste my fast passes. Although I will likely use them only for princesses meet and greets.
depends on her personality - how old is she, is she timid or brave? My tall, timid 5 year old was no to seven dwarves, yes to soarin, no to test track but yes the next year at 6.

Go on it as soon as they are tall enough. It's not scary Soarin? DS was 3years and 10 months the first time we rode Soarin' with him. He was afraid for a minute because he thought we really left the theater, I showed him where the edges of the screen are and explained that we weren't really flying and HE LOVED IT and went on 3 more times that trip Test track? It's not his favorite, but he went on at 3 and 4. He was a little nervous at 3, but fine at 4. Any other rides besides space mountain that are a little scary or bumpy? Tower of Terror - DS went on at 4. He was nervous during the part where you see the stuff ( before the drop) but not scared. He said he liked it, but will not be doing it again LOL!
He hasn't ever done Dinosaur because I don't like it, and he was too short last trip for Everest or Space Mountain. HE LOVES BIG THUNDER MOUNTAIN RAILROAD AND SPLASH MOUNTAIN SO SO SO SO MUCH.
i would go on youtube and type in the rides you're curious about... every ride has somebody that did a "ride through" video of it LOL so you can see what its like and get an idea. SO much depends on your kids personality and even their mood. we just went 2 weeks ago, and DS is 5. He rode Expedition Evereset 3 times (including at night when it was dark!) and liked it. he also really liked 7 dwarves (thats more of a "family" coaster, so its not too bad). he LOVED test track-- especially the part where you get to "Design" a car. and he loved the end where you go about 60 miles an hour. BUT space mountain was "too dark" for him, and he didn't like tower of terror this time either (even though he was ok with it last year when he was 4). When he was 4, he loved Dinosaur ride (even though i thought that was pretty dark and scary...) but it was closed this year when we were there, so we didn't get to do it. ANYWAY--- i would just go on youtube and watch some videos of the rides you want to know about it. even show her and see how she reacts or whatever...
It is so hard to tell, but the height limits (or lack of) don't necessarily mean they're ready.
My kids loved HM as toddlers before they "got" the ride, and are scared of it now. My sister took my DS1 on Tower of Terror when he was tall enough, but he definitely wasnt' ready for that.
Both my boys are tall enough for Mine Train. one loved it, one hates it.
I definitely agree that doing a YouTube walk through for a new ride is a great idea. We used that for the Radiator Springs Racers at Disneyland. That at least got my timid DS2 on the ride, which I thought he'd love. He still hated it, while DS1 loved it.
7 dwarves--not scary...it's kind of like big thunder mountain but even more tame soarin--if your kid doesn't like heights i might wait...otherwise that should be fine test track might be a little intense
others include: rockin' roller coaster, tower of terror, space mountain, haunted mansion...possibly splash mountain bc of the big drop (but its a generally cute ride and you can sit next to her and hold her whereas on like space mountain you are single file)
dinosaur is pretty intense and mission to mars (wait...did they do away with that?)
stitch's great escape is also dark and intense...pirates is dark but i wouldn't say scary...a sensitive kid might not love it though
otherwise things should all be pretty family-friendly..hope i'm not forgetting anything...
My 4 yr old did everything she was tall enough for (40")...didn't like Tower of Terror or Star Tours. Loved mine 7 dwarves mine train, splash mt, and thunder mt.
