You don't need a hotel reservation to book dining. You would lose the +10 advantage. However change hotel reservations should not impact you dining reservations.
What reservations do you want? While it would be a pain I might just do the reservations daily instead of hassling with a ressie you plan to cancel.

Make a reservation through Disney at a hotel you don't mind staying at if david's doesn't come through and to get the 180+10 dining window. If David's comes through, cancel the reservation through Disney (but only AFTER its less then 180 days from your very last day).
If you are keeping the ADRs on the same days/times then you shouldn't have to remake them.
OK, cool....But then what's to keep people from making reservations for longer stays then they intend (or if they don't intend to stay at all?) just to get earlier dining reservations? Or is that just something that happens?
They often don't let you edit your reservation to make it shorter. I wanted to take one day off the end of our second reservation and they told me know because I would need to rebook the entire thing and it wasn't available. I had to escalate it to a supervisor 2 levels up and have them review it to make a decision. This was a reservation booked without a discount so with a discount you can not just take days off at all unless it's still available to book with the discount (even if you argue).

This seems like a lot of extra effort for just a couple days advantage. I have not really heard of this being a problem.
