We we are planning to go in October so MK opens most days at 8 am (eliminates benefit of ppo breakfast in park) and closes around 7 most nights because of Halloween party

Eh, if you can get a 7am reservations you'll be in the park not much after 8. I wouldn't do that if it was my only MK park day, but if you have multiple, I think its ok. I have not heard good things about their dinners & they're much more $$.
Is it the characters he wants? Another option on an MK day is a lunch or dinner at crystal palace - maybe even one at like 6:30 a day that MK has MNSSHP so that you really maximize your time?
If this is one of the only things he really wants to do during your trip I wouldn't argue with it. Get a 7:00 reservation, and just try to get out of there as close to 8:00 as you can.
Frankly, we've never stayed straight through from rope drop to 7:00 with our kids (even now that they're older--9 and 5), and I can't say I've ever felt rushed or like we weren't able to do all of the things we wanted. You'll need a good touring plan, but that's not hard to develop with this much lead time.
I wouldn't go to another park if I was eating breakfast within walking distance of Magic Kingdom. I've never been, so I can't speak to it being a must, but the reviews I've read have been decidedly mixed.
