My DD was about that age (and size) when we went to WDW. She was whiney but made it. I think the good news is that you will be there when it should be cooler weather, so at least you won't be adding heat and humidity to the mix. We were only there 3 days, but I felt like we were rushing around every day because of the short trip.
If you are there for an extended stay, I say take breaks when needed and add in shows/things where you sit for a while.
My other suggestion is to have a pretty good plan on what you want to do, especially at MK. Day 1 at MK we were walking from one part of the park to another to do the rides we wanted. On day 3 we went back to MK and we got so much more accomplished because we made our decisions on what to do based on location. That seems so obvious now, but I think we were all a little overwhelmed on our first day at MK.
We didn't go to Epcot so I don't have any advice there, but apparently that is the day when you do the most walking.

I was really worried about my DS last winter at AK, but he was just fine. I would factor in lots of sitting breaks and just be cognizant of packing too much into the day. I really wouldn't worry about it.

My DD is 6. She hates sports. She hates running. She normally whines about walking a few blocks.
We make it all day at Disney no problem. Now, we've never done rope drop to close BUT we've made it 9 hours with no complaints. She loves Disney so she sucks it up.
I just am dumbfounded that your 6 year old is 3" shorter than me. LOL
How tall are you and DH??
Not that tall. 6'3'' and 5'10''. She grew a lot between 2 and 4. We went to WDW before she was 3 and she was at least 46'' and 50 pounds then.
Wow!! My dd will be 7 next week and is barely 45 inches and 42 lbs soaking wet... To answer your question, I would just take breaks if she gets tired and plan to do a few shows or longer attractions (country bear jamboree, hall of presidents, philharmagic).

We went this past July and DD (5) walked. I was so happy to be stroller free! We spent one afternoon with SIL and niece (who had a stroller) and within an hour I was so flipping annoyed with the maneuvering and parking.
Most days, DD could last from pre-park/park open until about 4pm before really tiring out and complaining. Having lunch reservations or doing seated attractions like Philharmagic, Turtle Talk, Frozen Sing Along, Bug's Life, etc in the afternoon helped to give her a break from walking. We tried not to carry her, but did a few times when we were rushing somewhere. She usually got a second wind after dinner and wanted to keep going.
We are facing a similar issue for next month... The strollers that you can rent in the parks are bigger just not sure of weight limits, even if you got a double instead so she had more room. They are pricey for every day use but maybe you can try to go without it and have that rental as a back up option.

Did you get on radiator springs? We were there last week and every damn time we'd get in line with our fast passes it broke down

We did get on Monday evening right before closing. .
When we went back in 2014 it broke while we were in line. It must be a glitchy ride.

I rented an adult wheelchair for mine - ages 5 & 6 and they just had to squeeze in together since they're both too big for a stroller and would fight over it being "unfair" when one could ride in a little stroller. I'm not strong enough to carry either one of them.
It worked very well. ONE dad told me he wished thought of it after carrying his daughter for the last hour.
