Oh, I sear in a dry pan and for less time. Maybe 90 seconds on one side and 40 on another? idk, but it's super quick. Then I finish in a 275 oven for about 15 minutes. Referred to as the Jacques Pepin method in one of my recipes (the one with the mustard cognac sauce I've been trying to recreate after having a version in Paris). ATK does a roast and then sear. I don't think the order matters.
While what you posted looks good, I couldn't bring myself to eat a half a stick of butter for 1 steak. I'm sure H would love it, though. I've had to research steaks b/c I cook them maybe 3 times a year, max, and then it's usually in beef wellington. I was veg for a long time, and I only make steak now to be really nice, so I've had to hunt for foolproof methods since I don't have experience on my side.
This sounds freaking delicious. I have always been intimidated by cooking steak. I'll have to try it.

Growing up my parents were super notorious for super over-cooking steak so I was under the impression that you couldn't make it at home and have it taste good. H and I went through 3 years of marriage just going out to eat whenever one of us wanted steak. I am so happy to be wrong. So is my wallet.
