Remaining days most likely either thin cutlets of chicken with honey mustard and salsa with brown rice or marinated chicken breasts with brown rice and veggies.
H is on a chicken binge, and while I'd love to mix it up more during the week, it's just super hard with is both working and him not getting home til almost seven. The chicken is fast, easy and pretty healthy. I am trying to convince myself that I'll expand our dinners while on leave for five months but we'll see how long that lasts!
