what happened with your pumpkin alfredo? ours was really good. i got it from food network magazine. it was an article about cooking with children, haha.
it was pumpkin, light cream, 1 shallot, a pinch of nutmeg, cheese, s&p and tortellini and then chopped parsley/cheese on top. i added broccoli, chicken, and red pepper flakes.
2 9oz packages of tortellini 1/2 cup canned pure pumpkin 1 1/4 cup heavy (i used light) cream fresh parsley, chopped 1 small shallot, finely chopped s&p to taste 1/2 cup grated parmesan (plus some to top) 1 tbsp butter pinch of nutmeg
-boil tortellini -melt butter and add shallot, cook on med-high for about 2 minutes until shallot starts to get soft -add pumpkin, stir to mix and let it melt a little. add a pinch of nutmeg. -add cream, mix, let it boil gently. add s&p to taste -add cheese, let it cook on low until pasta is done, then mix!
i should add that i added broccoli florets, chicken, and red pepper flakes. and it was amazing. i cooked the broccoli in a dab of oil, then added the shallot/butter and continued with the recipe.
also, my chicken was already cooked (leftovers), so if it was raw, i'd add it when i put the shallot in.
