Posting here as I know a lot of people entertain (and cook).
It looks as though we will be hosting a dinner for BF's family next week. That means 8 adults and possibly 8 kids. I've hosting big meals before, but typically I never cook the meat lol (my family does pot luck style). So, suggestions on meat dishes? Obviously it needs to feed a crowd. No turkey recipes. No lasagna, etc. as his mom is making stuffed shells for Christmas dinner. No Mexican food. I'd prefer to stay away from cooking a roast or ham, as I've never done it before I don't like experimenting for big dinners.
So, any suggestions? I have a big crockpot. I have two ovens. I have a four burner cook top.

Dice up cheddar cheese. Pound chicken breasts flat, put one asparagus spear and some cheese on it. Wrap the chicken around the cheese and asparagus and tie it. I put them in a pan with a little water and cover with foil. You can just bake them in the oven at 350 for 30-ish minutes, until the thermometer temp is right. I like to uncover them the last 10-15 minutes so they brown a little.
Tri tip is our go-to at Christmas. We've roasted it (though the splatter smoked), we've grilled it and we've used our smoker. We do a chimichurri and it's always tasty. I will admit DH takes the lead on the meat.
A ham is so easy. Seriously. We made one tonight. If you want you can make glazes and stuff, but today we were busy and literally we just put it flat side down in a roasting pan, covered it with foil, and cooked it at 325 (as said on package). We cook it longer than the instruction say, though, as we like ours more dry and less..."hammy." Really, so easy. You can also do really easy glazes if you want to do something without it being complicated. We did a brown sugar & mustard one a few times (Google it--lots of links). Only issue is that it can drip and burn onto your pan.

I liked the idea that superduper suggested. I found a recipe for bacon and mushroom stuffed pork tenderloin, that I am doing a test run on tonight. I figure that I can make 3-4, and serve it with a few different veggies and mashed potatoes. Done.
