What is everyone making this week? All healthy stuff?
I need to diversify my choices a bit, but to start it'll be stuff I make quite often.
I made a big batch of paleo chili yesterday and namasteak 's egg roll in a bowl today to have for lunches. I cleaned out all my "stock pile" of old lunches and relabeled containers. I'll add in chicken soup this week and then I should be good for lunches for most of January.
The end of the week is going to be tough to keep on track

We had filet and spinach casserole tonight. This week we will have salsa Verde chicken in the crock pot, a shepherds pie with mashed cauliflower on top instead of potatos, sauteed chicken with green beans, and maybe a pork tenderloin. Dh tends to dislike a full week of meal planning, so I have several options for the week and decide the night before what to make.
This is how I usually make it, but I just pinned a recipe using sweet potato. I haven't tried it yet, but I'm intrigued.

This is a new thing. We haven't been good about this. But H and I have gained too much weight and have been ordering out too often and drinking too much.
We are going mostly vegan and going to work hard at reducing cost, processed foods, and waste.

I am trying to go back to being mostly paleo, but I was thinking of starting another Whole 30 mid month. It just wasn't worth getting going this week with having a weekend away. Plus wedding=wine.

How do you do it?
I only have one kid, but I meal prep 2 weeks at a time and mostly use the crock pot during the week.
This is a new thing. We haven't been good about this. But H and I have gained too much weight and have been ordering out too often and drinking too much.
We are going mostly vegan and going to work hard at reducing cost, processed foods, and waste.
We will see how it goes, but I'm motivated.
Yes, I am getting back on track tomorrow. I lost 40lbs last year and gained about 9 back, which I'm ok with. Since Sept we had 2 long trips, then holidays and all of the parties and gatherings that go along with that time of year, I had the most enjoyable holiday season I've had in a while, so 9 well worth it lbs. I did keep up with my workout plan, so overall I'm happy but need to get back on my game. It is SO easy to fall into old patterns with eating.
It really is.
I've been thinking about going mostly vegan for awhile, and although eating poultry is easier, I just don't enjoy it.
My challenge will be I am lazy and my commute sucks. It's around an hour each way (and on bad nights can be up to an hour and a half or even longer). So I'm trying to find things that aren't too labor intensive or that I can prepare somewhat in advance. But we waste wayyyyyy too much food and order out too often. And I am drinking more than I want to be. There are multiple things coming into play.
S- pasta w/ meatsauce from the freezer, salads M- roasted salmon and potatoes with horseradish dill sauce, green beans T- sumac chicken with carrots and cauliflower W- at a friend's T- slow cooker beef barbacoa quesadillas/rice bowls, tomato-avocado salad F- tbd, thinking pork tenderloin roasted with pears and blue cheese, sweet potatoes, maybe broccoli? S- birthday party pizza for DH and kids, I'll fend for myself
I've also got a roasted spaghetti squash and baby spinach/kale to use with leftovers for my lunches
I only cook every other day. I, too, am in awe of people who can do it every night. We are just two, but I cook for 4-8 at a time. Leftovers for lunch everyday and dinner a few nights.
Tonight was Ham Steak, Mac & Cheese, and the requisite New Year’s Collard Greens (I hate black eyed peas, or we would have had those, too).
The rest of the week: Mon: Pan-Seared Salmon with Pear and Walnut Salad Tues: Fettuccini with Winter Greens and Poached Eggs Wed: I’m traveling. H will make the kids fish sticks, I’m sure. Thurs: Seared Hangar Steak with Warm Cabbage Wedges Fri: Delivery Sushi
*My secret to meal planning is that I like magazines and grocery shopping, and H does all the cooking!

How do you do it?
I plan only 4-5 meals at a time and every Friday is pizza night. I have a pretty good range of meals I'm comfortable making, so I know which ones I can accomplish in under 45 minutes. H's job is to keep the kids occupied while I cook, since we both get home at the same time.
I also rely on pre-prepped products during weeks I know I'll be swamped at work like the marinated meats and bagged salads at Trader Joe's.
Tonight: Reubens, fries, pickles Monday: Fried cod, corn, roasted broccoli and cauliflower Tuesday: Sloppy Joes, salad Wednesday: Braised coconut spinach and chickpeas over sweet potatoes (underwaterrhymes, you might like this recipe for your new vegan kick. It's so good!) Thursday: Sausage and cabbage Friday: Orange sriracha chicken, zucchini, rice

How do you do it?
For me personally, cooking is a time at night when I can relax. I turn on music or a podcast and zone out. H with the girls so they stay out of the way. On the nights he's working at dinner time its harder. We also fall into bad habits of too much takeout if I don't cook most nights.
And while Im a full-time student I don't work outside the house so that makes my time much more flexible. I know its gonna be a lot harder when I start working outside the home.

Monday- Roasted chicken breasts, maple roasted carrot salad, french bread Tuesday-Shakshuka, bread Wednesday- Cider-Roasted pork tenderloin with roasted plum chutney, veggies, roasted potatoes Thursday- Moroccan grilled lamp chops, couscous, roasted carrots Friday- Korean style grain bowls Saturday- I got a pasta maker for christmas and am going to attempt homemade pasta for the first time
Thanks mofongo! We are hoping we can get by with only cooking 2-3 times a week too.
I don't like cooking every day and find cooking 3 times a week the easiest way to keep eating at home. Sunday's I typically make a big soup or salad for lunches, a breakfasts casserole or whatever meat we will eat for breakfast, and a dinner. Then I only need to cook again Tuesday & Thursday nights!
