I eat/drink stuff well past the expiration date as long as they smell fine. I had a bowl of cereal this morning with milk that expired on 4/9. Waiting to see if I die.

Ditto others, as long as it doesn't smell like death, I'd use it. Sell by dates are for manufacturers and how long they can keep it on their shelf for peak freshness. It doesn't actually "expire" on that date.

Vacuum sealed, yes. Pork wrapped in plastic on a foam tray from the supermarket, no. Of course I would give it the smell test, but I would expect a vacuum sealed roast to be just fine.

Is it precooked? If yes, I would.
It's a long story, but I once I hate 3 WEEK old pork ribs that were cooked and vacuum sealed. I was pregnant at the time. I'm still alive and $300 richer thanks to the complaint I filed with my grocery store.
