I bought some fresh ginger for a recipe that I tried last night (Bourbon Chicken - I'd link to recipe but I wasn't that impressed), and I'm not sure what to do with the rest of it.
Anybody have any great recipes that use fresh ginger?
Also, how do you store ginger? I saw so many options when I tried looking it up last night that I wasn't sure what's the best.

Peel it and freeze it. Then, when you need to use it, just pull it out and grate it (still frozen) into whatever you're using it for. It will last for a long time and you won't be out of ginger.
I love it in Asian dishes -- General Tso's Tofu and stir-fries.

I used to peel, but it was time consuming when I was doing lots. I now wash well, dry, put through the food processor and freeze in small jars since I use it quite often.
