First, anyone make crepes before? I have a large on-stick pan I plan to use. I read to use 1/4c batter and swirl to spread batter flat. Any tips?
Second, I found a filling for a lemon cheesecake filling. It uses cheesecake flavored pudding, lemon juice, confection sugar and heavy cream. Should I add Fresh Strawberries? I think it would be a good combination. I originally planned for Blueberries since I love lemon blueberry mixed but the strawberries were buy 1 get 1 so I bought those instead. Thoughts?
My totally unscientific opinion: I think I would slice the strawberries and keep them on the side. Not sure if I would like the texture of the chunks of strawberry with the soft crepe and cream filling. I do like the idea of serving strawberries with them, though.
No tips on crepes. I've never made them. I have seen my mom make them and she swirls the butter and I know they cook really fast, but that's all I've got. We always had them a Slovak way which is brushed with melted butter and sprinkled with cinnamon and sugar and rolled up. AWESOME. Also good with butter and jam, rolled up.
My homemade pancakes are basically crepes, and I make them all the time. When I'm making them to go with syrup, I make them a bit thicker, but I also do them very thin and then spread with either nutella, jam or honey to make a dessert (Serbian recipe I learned when I was with my exBF).
Hmm..tips... - Even with a non-stick pan, be sure to brush the pan with a bit of oil for each one. What I do is pour a tsp. or so into the pan for each, then use a paper towel to spread it all around to coat the bottom and sides.
- I use a ladle to pour the batter into the pan. So I have the pan in one hand, scoop and pour with the other, and then start moving the pan around basically right away as the batter falls into the pan so it spreads around before it sets too much.
- I think your filling sounds good. I personally love strawberries so I would include them, but I think I'd slice them and put them on top of the crepes, that should make for a nice presentation.
Crepes were a hit and super easy. I didn't do the lemon, so they were strawberry cheesecake. I misread the recipe. It called for a lemon glaze. I just ommitted that and added sliced strawberries on top instead
