Dessert for Mexican-Themed Potluck?

My husband's office does a themed potluck every month. This month's theme is burritos. Some are bringing in a component of the burrito and others are bringing sides/desserts. My husband picked desserts, and I had suggested Tres Leches cake but a coworker at his last job made it a lot and it wasn't something he really loved. Any suggestions?

I love the idea of that churro recipe! I had seen another recipe for churros but I've never really fried anything so I'm hesitant to try something new like that for an occasion where people other than my H and I are going to eat it lol. Thanks!
