Im going back to teaching Resource after 9 years. Since I'm going back to a bigger caseload (taught sdc for 3years after that but obviously that was a smaller caseload), and I've never been particularly organized, I'm determined to find a system.
I am definitely a paper and pencil kind of person (as opposed to on the computer or phone) and I THINK I'm looking for 2 things: an IEP organizational type binder, and individual student binders

I found an organizational binder materials on Teachers Pay Teachers for counseling. They might have some materials for you. When I taught resource I had a binder that had IEPs, parent conference log, attendance, goals, related services, testing info etc
Same! Last year I used individual paper folders for each student, which was helpful for annual reviews and goal update time (held benchmarking data and the like) but I need a system for a binder for ALL my paperwork.
