Have you used the Quiz feature on Google Forms? It works great with multiple choice and T/F questions, will automatically tell you which questions were frequently missed, and creates graphs for responses to each question.
For bigger projects, I use Doctopus and Goobric (which also makes compiling data much easier)

I have students submit quite a bit of work on forms. I usually use the Fluberoo add-on to grade things because I find it easier to use than quizzes in google forms. You can have the answers be multiple choice, something specific (like a word of number) or you can grade answers by hand.
