If you're cooking meat, I'd keep it simple for sake of keeping people happy: hamburgers, chicken, bratwurst, and a veggie burger option if you're into that. Potato salad, cole slaw, chips, salsa and guac, veggie tray, and brownies/cookies. Beer and soda.

DH is in charge of cooking whatever i buy in the meat dept. Any ideas on numer or pounds of meats/person? Guac is an excellent idea. Wonder if costco has good premade guac? I was planning to make a leek and pea pasta sometime this weekend. Could that sub for potato salad or slaw or should i make that for myself some other day?
Think i should have an app or is that the veggie tray?
I'd consider two meat items per person to be safe. I'd consider chips/dips/veggies as appetizers. Pasta salad is a great substitute for one of the sides. I'd probably sub for potato salad.

Costco tends to have platters of bbq meats (at least they do here in England so I imagine even more so in the US) - we get one burger and one sausage per person, some chicken as some people don't eat red meat and veggie burgers. We buy cheese to make a cheese platter, veg & hummus, chips and dips and some desserts (mainly fruit).
I like having a few make ahead sides like baked beans and mac n cheese. They're crowd pleasers and they feed a crowd.
I've been making greek salad as a side lately and it goes over well. Also good in advance (hot house cucumbers, kalamata olives, red onion, grape tomatoes, maybe some arugula, feta, vinegrette). Put out some hummus and pita wedges (you can toast those w/spices or leave plain) and you've got a nice spread. Add more olives, grape leaves, salami, and similar items for apps too.
If you're feeling ambitious, deviled eggs are my other go to (I prep in advance, put the yolk filling in piping bags and make them right before guests arrive).
