Chicken thighs 5-6 hours on low, any sauce. I like soy, honey, sriracha, and sliced garlic.
My favorite veggie chili is the easiest: 2 cans of beans, 1 each diced sweet potato, onion, sweet pepper, hot pepper (I've done anything from poblano to Serrano). Big can of crushed tomatoes, chili powder, cumin, and coriander. I've also just thrown a taco seasoning packet with some of the spices before. It looks like it won't be enough liquid but it is. 8 hours on low. Sometimes I add corn. It's always tasty. I ruin the vegan-ness by adding sour cream and cheese on my bowl.
1. Chili and serve with cornbread or chips and toppings 2. Zesty Crockpot BBQ Chicken - similar to pulled pork only using chicken breasts. Makes great leftovers to put on top of salads 3. Manicotti or lasagna - you just add the final layer of cheese to the top about 20 minutes before serving and while you get everything else set at for dinner
I really like this and make it in the crock pot. www.bhg.com/recipe/shredded-pork-roast-sandwiches/#page=1 The leftovers are great if you crisp them up in a skillet (with some southwestern seasoning mix or similar is good) and make pork tacos with (flour toasted a bit on a skillet) tortillas, cheese, avocado, tomato.
There are a lot of recipes for chicken for tacos/burritos involving cans of salsa and packs of taco mix. I've done things like that before and they are good.
There's always the beef roast where you put the beef in with a can of cream of mushroom/beefy mushroom & a packet of onion soup mix and just cook it for a long time.
