Happy Tuesday, all! What's new with you?
I won the chili cook-off at work yesterday (5 out of 6 years, not too shabby), despite taking a risk and going totally non-traditional with a creamy chili verde! I had to laugh, though...some co-workers asked for the recipe, so I started in with "sear the pork butt in bacon fat," and they were all on board, but when I started to explain making salsa verde from scratch, they were all like "nope, too much work...this is why you win!" It really wasn't a ton of work (especially if you substitute jarred salsa verde), but there were a lot of steps, and it took a lot of hands-off time. It's fun for me, but I can see how someone with a couple kids to look after does not want to spend that kind of time on cooking!

Not much is new here. I went to the chiropractor yesterday afternoon. Something he released must've really needed it because I practically fell asleep on the table. It was amazing. I had so much more energy last night because of it.

I wish I had my phone nearby to take a picture of my cat Sissy. You might remember I had to put down my boy cat, Buddy, back in March. Well the box his ashes are in is sitting on my desk inside a black velvet bag. Sissy girl is currently snuggled up next to them, with her head resting on top of the box. It is so damn sweet.

Mmmm, that does sound yummy! I told my CWs that DH makes better chili than I do (at least for traditional chili), so they have demanded his recipe next year. He laughed when I told him, but it's true!
I am waiting on taco tuesday tonight with my friends. We were all away last week so it's been two weeks since we've taco'ed about it. I have never realized how much I need these few hours with them every week to feel like a normal person.
Buddy and London are getting along very well, not that they never have, but it's nice to see that they are very comfortable in each other's company.

It's been kind of crazy for the past couple of days for me. I finally got an offer on my house! I was getting nervous because it was on the market for 24 days and I only had three showings. Third showing was the magic one with an almost full price offer and no contingencies. Although we only have a little over 30 days to move! Yikes! We'll be moving the Monday after Thanksgiving weekend so I'm stressing a little.
This coming Sunday is DD's 7th birthday and I'm actually very well prepared this year! School birthday favors are all finished (they're not allowed to bring food - boo!), her party with her friends is Friday and I'm all ready for that. I just have to wrap her presents still which I plan to do while she's not home on Wednesday night.
I texted my old coworker friend happy birthday yesterday, and he told me that my old manager lost all the applicant documents i gave her before I left and blamed it on me that nothing was working. Lady, I walked you through procedures step by step, and you took notes. And foreceably took those documents from me last Thursday even though I offered to complete them. I told old coworker that and he said she's been blatantly lying about it.
So so glad I am out of there. It gave me anxiety just seeing that text so I'm not going to ask about any updates going forward. Not my problem any more. Hard to read, though.
Hi everyone! I’m flying home from CA and got upgraded. I was stupidly excited for it. There’s something about an upgrade on a 4 hour flight that just feels so luxurious. And I got enough work done this morning that I’m taking the flight “off”. Not checking email or anything. It helps that it’s already after 5pm on the East coast but still feels ridiculously good to just surf the internet and maybe even watch a movie.
Went to dinner with co-workers last night to this really good tapas place. We got into talking about how the internet has somewhat commodotized dating with all the dating apps. It was interesting to hear the perspectives on it from three married guys who have never used online dating services. They are SO out of touch!
My neuropsych testing was able to be moved up! I'm going in next Wednesday, November 1st. I'll admit I'm a little nervous about it, but looking forward to it. Started filling out the paperwork and in the primary language field I wrote "Language." Didn't notice it until I was looking it over. And this is why I'm going in!

Can I have that chili recipe it sounds amazing. I made pumpkin chicken chili last week.
Not sure which one you're looking for, but if it's mine, here it is. The homemade salsa verde part is optional, but recommended:
Pork
3 lbs pork butt
1 onion, thinly sliced
juice of 3 limes
juice of 1 orange
4-6 garlic cloves, smashed and peeled
Season pork liberally with salt, pepper, and cumin, and let it rest overnight in the fridge. Sear in bacon fat over medium high heat until nice and brown on all sides. Throw it in the crockpot with the remaining ingredients, and let it cook on low until done (6-7 hrs in my crock pot). Shred pork, and set it aside along with the cooking liquid, onion, and garlic.
Salsa verde:
1.5 lbs tomatillos, peeled
3-4 poblano peppers, halved, seeds removed
3 jalapenos, halved, seeds removed from half
2 bell peppers, halved, seeds removed
3-4 cubanelle peppers, halved, seeds removed
1 onion, halved
4 cloves garlic
Half bunch of cilantro
Lime juice (maybe ¼ c?)
Put the tomatillos, onion, garlic, and all assorted peppers (skin side up for the peppers) on two baking sheets. Broil until nicely browned. I turn the tomatillos to make sure both sides are brown, but it’s not necessary for everything else. Transfer tomatillos and onion (and any juice from the baking sheet) to a blender. Put the peppers in a bowl covered in cling wrap for ~10 min. Meanwhile, peel the garlic, and add it to the blender. Peel all the peppers, and add the bell peppers and jalapenos only to the blender. Dice the cubanelles and poblanos, and set them aside for later. Add lime juice to taste and cilantro (stems, too) to the blender. Puree until smooth, and season to taste with salt (maybe ¾ tsp?).
Chili
1/2 lb chorizo, removed from casings
1 onion, diced
4 cloves garlic, minced
2 tsp oregano
1 Tbl cumin
4 cans great northern (cannellini) beans, drained and rinsed
Pork from earlier
Diced cubanelles and poblanos from earlier (can substitute 4 small cans of diced green chiles)
2-3 c. salsa verde from earlier (can substitute your favorite jarred salsa verde)
2 c sour cream
Chicken broth (optional)
Brown the chorizo in a large pot. When it has some good color, add the onion and the garlic, and sauté until chorizo is cooked through and onion is translucent. Stir in the cumin and oregano, and cook for about 1 min, or until fragrant. Add at least 2 c. salsa verde—I probably added closer to 3. Add the beans, pork (and all the liquid, onion, garlic, etc.), and diced chiles. Stir to combine. If the mixture doesn’t have enough liquid, add a little chicken broth. Season to taste with salt. Simmer for ~10-30 min (the time really isn’t important, since everything is cooked at this point), remove from heat, and stir in sour cream.
