I'm trying I get a list together of stuff we need/will register for do I need or is it nice to have all of these items? Swing, bouncy seat , rock n play , activity mat, Exersaucer, jumperoo? Which of these items are duplicates and what would you want? We have plenty of space, but I don't want the house over run if it's not needed. WDYT?
I would register for all of it because if your baby likes these things, it will make your life A LOT easier. You don't need to have all of them, but they are nice to have. Plus, if you are planning to have more than one child, what your first might not like your second may so you will likely end up using all of it at some point. We have definitely used all of these things with three children.
If you want to cut something out, I'd probably choose between the exersaucer and the jumperoo because they kind of duplicate the same experience. However, if you have a two story house it's nice to put the exersaucer on one level and the jumper on another just so you can put the baby down and be hands free for a few minutes. The jumper is also recommended for older babies so you typically use the exersaucer first for months 4-6 and then the jumper starting around 5 months.
we have all and use all. Baby sleeps in the RnP at night and during the day naps in her swing or her bouncer. The pack n play is used mostly for diaper/clothing changes or a place to set baby down if I need to run to the bathroom and the dogs are out.
I did not register for the exersaucer or jumperoo though, I just bought those at a consignment sale last week as there are always tons there and they are typically in like new condition and half or less than half the original retail price. We ended up having to spend a lot on registry completion since many gave clothes at our showers, which was fine. It made more MM sense to get those items at consignment where I knew I could save a lot on them.
We registered for most of that and got a Rnp. DS naps in it during the day and occasionally sleeps there at night if he's got a cold (he sleeps flat in his crib typically). DS loves his activity mat and we've had 3 exersaucers given to us. I think that's something people look to get rid of so ask around or go to garage sales for that. DS started to use that at 11 weeks with blankets shoved around him and he loves that. We did not have a bouncer or swing but I could see having one of those. I typically take his Rnp from the living room to our room if I'm getting ready but it would be easier to have one more thing.
Of those things, we only have the playmat and swing. We use the mat daily. He'll only tolerate the swing for a few minutes. We're looking into getting either an exersaucer or a jumperoo

You don't need them all.
We had 2 swings. We didn't have a bouncy seat, rock n play, or jumperoo. We did have an activity mat (and they're not that expensive, and ours folded up) and an Exersaucer we bought on consignment.

We have a swing, RNP & activity mat. He naps really well in both the RNP & the swing, so I love them both. The RNP is nice because we can move it easily from room to room and use it for overnight trips to my parents. No advice on the jumperoo and exersaucer since I'm trying to decide between them for ds!
We bought or were gifted the bouncer chair and an activity mat, and are borrowing a swing from friends. I disagree that the RnP is a must-have, as I don't know anyone in real life who has had one, and their babies have been fine. I really don't want an exersaucer or jumperoo because of their size, but will likely end up with one; we'll probably borrow our friends' jumperoo since their infant will be done with it by the time ours is ready.

We had a swing, bouncy seat and activity mat included in what you listed.
The bouncy seat is cheap enough and comes in handy often enough that if I hadn't received one as a gift I still would have bought one. Some babies like swings, some don't. The activity mat is nice but not a necessity. I never missed not having a rock n play, exersaucer, or jumperoo, but I did buy DS a "walker" that probably is similar to an exersaucer.

I was very vocal about not wanting my house taken over by plastic baby crap. Unfortunately, it's kind of inevitable. There is a relatively short window where you have to have all those giant baby containment devices out, though, so you can at least look forward to having your house back in a few months!!! (Until the kid gets old enough for giant toys, but at least those can be put in the kid's bedroom!!)
I'd say you definitely don't need to buy everything at once. The swing, bouncy seat, and rock and play are things you need immediately. The activity mat is for a slightly older child (starting maybe around 3 or 4 months?), then the exersaucer/jumperoo is for an even older child -- maybe 6 months or so?
You don't need all of them, of course, but you won't know what you need until your kid is here.
As far as newborn stuff, the rock and play wasn't around when my DD was born, so we didn't have that. We had a swing and a bouncy seat. Actually, we had two bouncy seats -- an expensive one that was really a vibrating seat that wasn't on a wire frame and so didn't bounce and a cheapie one. She hated the more expensive one. Get a cheapie one with a wire frame so when the kid moves his/her arms, the thing bounces. My DD also hated the swing, but there's no way to know that ahead of time. Our plan was one "device" for upstairs and one for downstairs -- we ended up just having the swing as expensive, ugly room decoration and moving the cheapie bouncy seat around where ever we went.
The activity mat -- get one with lots to look at. Ours was a Baby Einstein one with a star that lit up and played music. My daughter was obsessed with that thing -- it was awesome. It was the only way I could shower for MONTHS.
I never understood the exersaucer thing. We only had a jumperoo (which was awesome, by the way). My thought was a jumperoo is exactly the same as an exersaucer, except it also bounced. So why not get the device with more stuff? Jumperoos are awesome -- at my DD's playgroup, the 3 year olds still want to get in a jumperoo if it's around for someone's younger sibling.
Also -- before DD was born, I was all about simple, monocromatic baby stuff that would look good in my house. I got over that once DD was born. Babies LOVE bright colored stuff -- it stimulates their brains. So just go for the obnoxiously colored stuff right from the start. And if it lights up and plays music, all the better. That cheapie bouncy seat my DD loved was a present, and it had a monkey that played music if you pulled it. I can't tell you how many hours I spent pulling that stupid little ring for the 30 second song. She adored it.
I don't think you need them all. DS *loved* his RnP, we used it all the time until he outgrew it at 4 months old (he's huge). I still miss it. It was so nice to be able to move him around the house with me while I cooked, cleaned, used the bathroom, etc... DS never liked his bouncy seat but I know lots of babies do. We never had a swing and never missed it, he slept great in the RnP.
Ditto pp, the exersaucer and jumperoo are pretty much the same experience. I would buy ONE of those used off craigslist later. Baby won't use one until he/she is ~5 months old. We got our jumperoo used off craigslist for 50% off.
ETA: Starting at 5 months, DS love loves LOVES his jumperoo. He starts bouncing in my arms the moment he sees it. It totally keeps him occupied while I make dinner. Best.baby.item.EVER.
