I know how you feel and it's something I'm still learning to be comfortable with, too. After all, I remind myself, one of the reasons I divorced my husband was I felt I was missing out on so much I wanted to do. Dining out alone in a proper restaurant is still hard for me, as is going to a bar. But I go to movies by myself, go for walks/hikes/sightseeing alone and actually enjoy it because I can go as fast/slow as I want. I joined some MeetUp groups to push me to meet new people with shared interests, but I can't say friendships have come out of it yet.
I tried Bumble BFF, though didn't get responses from my matches YMMV, though, so you should try it if you haven't.
I'm shy and introverted, so I had to just force myself. It's awkward at first, but no one else notices it like you do. I went places I was familiar with first and then expanded from there. I talk to the bartenders if no one else when I'm out at a bar. It's a great way to start. I go to some bars, certain restaurants, and on hikes solo. The hiking solo felt really empowering.

had that's what I feel like, that someone else does noticed, but I'm sure they don't. I am also shy and introverted. do you get nervous or anxious?

Yes, I do. That's why I started where I felt a little more comfortable, places I was already familiar with.
What about some meet up groups or joining a volunteer organization? Are you an animal fan? You could maybe check with your local pet shelter to see if you can take dogs out for the day on walks or to parks? How about an exercise or yoga class?
I'm active and never was a bar scene person, when I did go out to a brewery I would take my pup with me. I mostly did a lot of hiking by myself and joined some run clubs/made friends at weekly exercise classes at my local gym.

I have looked at meetups, but when I do a meetup, that part gets me anxious when I meet new people. I did join a gym, which I do by myself
