Typically I did gift cards. Amazon, Starbucks or Dunkin Donuts. Last year there were too many people, so I bought each person a painted wine glass from Pier 1 and filled it with candy. I also become the Crazy Cookie Lady in December, so I made cookie platters for my team and other teams with whom I worked closely as a thank you. Then the other two senior managers and I brought in lunch for the department. We didn't have a head of the department at that time, so we just did it.
So gift cards, or if everyone is local maybe bring in a reasonable lunch and comandeer a conference room for lunch this week?

I did a Target gift card for one...nothing for the other - Jehova's Witness for the win. I'll give her tequila and margarita mix on her wedding anniversary since she does celebrate that.

Gift cards are great! I recently received Meijer gift cards and a Ruth's Chris steakhouse gift card. I was pretty excited about the Ruth's Chris gift card - now DH and I can have a nice night out and only pay for babysitting.
Forgot to share what I got this year! All managers this year received a gift card to a really nice hotel chain from our bosses. It's pretty awesome to get a night away at a hotel I'd never spend the money on normally.
I’m a bah humbug - in ten years I have never received a gift. I stopped gifting for the most part - occasionally I do but not for Christmas. Having said that, a GC would be my pick.
