I realize this gets asked all the time, but I'm tired of the same stuff that I always make.
Beef stew Chicken tortilla soup Chicken noodle soup Chili Pulled pork or shredded chicken Crockpot lasagna Roast with veggies I've been disappointed by freezer crockpot meals lately. Where you dump raw stuff in a bag, freeze it, then pull it out and put it in the crockpot. It's convenient but not that good.

I tend to stick with soups or chilis. I feel like most crock pot recipes that are meat/veggies end up with dry meat and soggy veggies (unless you're going for shredded chicken/pork/beef). I did this last night which was really good:

Sausage and Peppers are good. I didn't add all the spices like this recipe. I think I literally threw a package of sausages, a jar of sauce and some peppers in and turned it on lol foodfolksandfun.net/sausage-peppers-slow-cooker-recipe/
Cuban-Style Pork & Sweet Potato Stew (its a weight watchers recipe) 1 large sweet potato peeled & chopped 1lb pork (I use a couple thick cut pork chops and then break up before serving to save time) otherwise chop into 1" cubes 14oz can of diced tomatoes 1 garlic clove (I skip) 1/4 cup OJ 2 medium scallion chopped green parts only 1/2 tsp salt 1/4 tsp ground cumin & black pepper 1.5 TBSP lime juice 2TBSP cilantro
Place all ingredients but the lime juice and cilantro into crock pot cook on low for 7 hours add lime and cilantro before serving.
I like this one because I can add more potatoes which DD loves and the pork is so tender it falls apart.

I like the recipes that I can prep the night before and then throw together quick in the morning. Anything that takes too much time in the AM doesn't work since I am not a morning person.

I did this the other day and also added a packet of taco seasoning, a can of rinsed black beans, a can of corn, and cream cheese. Served it over rice. Sooooooo good.

I am so jealous! I loved making this with beans, but DD can’t eat them. The corn is a great idea!
I do a lot of chicken breast and then turn them into something else easy: enchiladas, chicken pot pie, chicken tacos, chicken casserole, Mexican chicken pasta. I did chicken breast plus cream of chicken and 2 packages of chicken gravy which was delicious and served over potatoes or rice.
I also love northern beans and ham, but I'm from the South #regional. I don’t know if this is quite the same everywhere else.
