Its crock pot week to wean DH into being in charge of DD and dinner 3 nights a week (1st time he is stepping up and doing this during tax season) Mon-Grilled cheese or quesadillas after practice Tues-Pork Stew crock pot Wed-French Dips after practice crock pot Thurs-Pot roast, potatoes carrots, onions crock pot Fri-Chicken patties and tater tots Sat-Chicken Enchilada crock pot Sun-Fish, rice, veggies
Side note: DD pealed the carrots and sweet potato yesterday to help me while I was meal prepping for the week
I made a huge batch of meatballs and a small batch of taco chicken. Leftovers all week since DH is traveling. I will do meatball sandwiches, spaghetti squash and meatballs, taco chicken salad, quesadillas, etc. I also made chicken and butternut squash risotto the other day, so I will have that at some point too.
The kids asked for tacos and taco salad on separate nights - their objective is less time in the kitchen for me, so awesome. Also hot ham and cheese sandwiches with fruit salad, fish and broccoli.

-Leftover Sausage, peppers and onions -Spanish rice with ground turkey -pork loin and something green -spaghetti squash with ground turkey meat sauce -fill in the gaps with plenty of leftovers of the above.
Tonight Dh has some kind of appetizers he wants to try and that will be our meal. Leftover chili for the kids.
Tuesday - creamy chicken noodle in crockpot, cornbread Wednesday - beef stew in the crockpot, rolls Thursday-spaghetti, garlic bread Friday - vball tournament for me, Dh and kids are on their own.
sandandsea, your chicken taco is similar to my enchilada casserole add in strips of corn tortilla and cheese an hour before serving. DH really likes it, DD not so much.
