twinmomma , do you ever pile pulled pork on top of sweet potatoes? So good!
Mon - Spanish rice with ground beef and corn Tue - egg roll in a bowl! (erinshelley21, I am so excited to finally try this!) Wed - SteakUmms Thu - lefties Fri - Shrimp Alfredo with green beans
judyblume14, I haven't, but we all love sweet potatoes, so maybe I'll do that instead! I have to run to the store to get them either way. What is egg roll in a bowl? It sounds like I need it in my life!

I'm going to brown some ground pork (you could sub shrimp or chicken), add in some soy sauce and sesame oil, green onions and this cabbage/kale/broccoli mix that I buy bagged at walmart. If I feel like tiny-chopping carrots, I might add them too. Here's a recipe you can try. But erinshelley21 might have a better one. She is the one who gave me the idea!

Yum!! I'm going to have to try this one. That sounds amazing - and like it would reheat really well for lunches at work.
I've only done shrimp, ground pork and then fresh side bacon. I have no idea where to buy that kind of bacon except for if you get a hog butchered haha. But all have been delicious. And it does reheat well!
judyblume14, I typically just use about half a bag of shredded carrots from the store. Carrots aren't going to make or break this dish if you don't feel like tiny chopping any
