Tue: Pan-fried basa w/basmati rice, salad, and roasted cauliflower with this AMAZING green goddess dip that I saw on Queer Eye: cilantro, green onions, parsley, lime juice, olive oil, salt & pepper and some plain yogurt, all pureed in the food processor. OMG so good - I will definitely make that again, it would be great with so many things...
Uh, well...this is all I've got for you! Over the last couple of days, we had
-Instant Pot burrito bowls
-lettuce wraps with ground turkey. I used this recipe in part b/c I had all the stuff and it was super easy, and it turned out well. I'm sure it would be even better with real ginger root, and some water chestnuts:
DH is OOT for works so today I timed up my Costco run right before dinner so the kids had Costco pizza and then I ate spinach and artichoke dip with crackers and mint chip ice cream for dinner after they went to bed. Earlier this week we had:
grilled steaks, asparagus, cous cous salad
Whole branzini fish pan seared and finished in the oven (I stuffed the bellies with parsley and lemon), tomato bocconcini salad, oven fries
Tomorrow my mom is coming to stay with us and making fresh homemade noodles.
Friday will be camp fire grilled chicken apple sausages, foil packet potatoes and s’mores. (We’re camping!)
