We have done both a Mexican all inclusive and a Caribbean cruise Vacation with an infant and they were both good. Mexico was good because we could go back to the room to nap whenever or nap under an umbrella. The cruise was nice because there were always activities that you could participate in even when you had a little one. I think it depends on your personality before children to determine what you should do post children.
I think you're probably fine with any resort, honestly.
My sister took her infant (who would have been about 3 months old) to a Melia property in Puna Cana last September and they had a nice time. We also went to a Melia property in Cancun with my nephew when he was young - maybe 4 months? I was along on that trip, and I recall he slept a lot during dinners. They had a crib set up for him. You had to pay a little extra (maybe $20 a day?) but we reserved a palapa each day so that there was plenty of shade by the pool. As long as you aren't letting the baby scream for hours poolside or at dinner or whatever, I think there is no reason why any resort wouldn't be baby friendly, honestly. It's not like an infant is doing activities so you don't really need anything that specifically caters to kids.

We did a Mexican all inclusive (Iberostar) with an infant and 5 year old and it was great. Our kids both always loved water and pools so it was pretty easy for us. Lots of sunblock, hats, pool floaties, and we were set. We also always double diaper (disposable swim diaper inside of the reusable swim diaper) and it works perfectly. We also changed him into a dry diaper for nap time to avoid a rash from the wet clothes all day.
