Great question! I'm wondering the same thing for our February trip. Is it accurate that just Fantasyland and Tomorrowland are open? Should we still arrive 30-45 minutes before official start time? What are the lines like for SDMT or PP or the other popular rides during EMH?

So we did early morning at Disneyland twice which I realize is different but we chose rides that weren’t too long to ride and that no one else would be running to. We did 8-10 rides both times! We did things like Buzz, Tea Party, Dumbo, and then right before the park opened we’d get in line for a more indemand ride.

Only Fantasyland and Tomorrowland will be open. We hit Tomorrowland first to knock out Space Mountain, then ride Buzz 2-3 times to get our Galactic Hero pins. From there, we move toward Fantasyland. Skip the Speedway- they only have one lane open and it's more efficient to go back later. We'll pick a couple things in Fantasyland, then wait for rope drop for Frontierland so we can take care of Big Thunder and Splash Mountains. From there, we take care of Jungle Cruise and Pirates before out FPs come into play.
We can knock out a good portion of the park before lunch.

The lines for PP, Space and 7DMT build quickly so I would pick one "headliner" to rope drop at EMH. If you try to do one then another you'll probably end up stuck in line for 20-30 minutes on the second ride and waste the hour.
We usually do exactly what stephm0188 does, except my kids are not tall enough for Space, so DH will go to Space while I take the kids on Astro Orbiter. Then we meet up and do Buzz and go to Fantasyland then Frontierland.
