What's the trick to getting the potatoes to cook all the way through? Do I need a mandolin the get really thin slices? If so, which do you recommend?
I love scalloped potatoes, but it takes like two hours for the potatoes to cook all the way. I'm hosting a dinner Friday and want to make them to go with ham.
We've made skillet scalloped potatoes before (there are a ton of recipes out there) and we like them because we have more control over the actual cooking of the potatoes.
I don’t bother with a mandoline but I do parboil the potatoes before baking. You can even do that the night before. Then they only take about 1/2 hr to bake.
