I’ve been on a roll recently with good recipes that aren’t high calorie. I’m so glad!
Sunday- sheet pan jambalaya from Cooking Light (kids got hot dogs) Monday- spatchcock chicken with hasselback potatoes and spiralized zucchini also from Cooking Light Tuesday- I’m out of town for work Wednesday- Crockpot Greek chicken over or with salad Thursday- leftovers or out Friday- pizza
Last night I made the King Ranch casserole that you posted, mommyatty.
Tonight DD1 has a group meeting, so it’s veggie burgers/sandwiches. DD2 and I might make guacamole for her dinner.
The rest of the week will be different salads. I might make sheet pan fajitas and put the mixture over salad for something different. Have to get back on track after vacation.
