Ds's pre-k is doing a unit on fall next week and I asked the teacher if she would like me to bring in a fall themed snack and she was excited about it now what to bring....I was thinking maybe mini pumpkin muffins...something that can be eaten in one bite or two by they frown upon messy stuff. Any recipes that you guys like? Teacher did not seem to be worried about allergies, but I won't put in nuts and I am not sure about chocolate chips. They normally have things like goldfish, animal cookies, etc.

Chocolate Chip Pumpkin Muffins
½ cup melted margarine or butter 1 ¾ cup pumpkin (regular size can not the jumbo pumpkin can) 2 eggs ½ cup water 1 ½ cups sugar 1 ¾ cups flour ¼ tsp. baking powder 1 ½ tsp. baking soda 1 tsp. cinnamon ½ tsp. nutmeg ¼ tsp. cloves ¼ tsp. salt 1 cup chocolate chips
Preheat oven to 350 degrees.
Line the muffin pan with paper liners.
In a small bowl, mix together the margarine, pumpkin, eggs, and water.
In a large bowl, mix together the sugar, flour, baking powder, baking soda, the spices, salt, and chocolate chips.
Pour the liquid ingredients into the larger bowl.
Bake at 350, muffins for 20-25 minutes, loaf for 1 ½ hours.
This is the recipe my mom always used when I was growing up. So yummy! I don't know the original source.
