In our experience, one-day tickets are the least cost-effective way to do Disney. Florida residents and military members can get slight deals on one-day tickets, but it’s not much. The last time we looked, it was going to be nearly $500 for our family of 3 plus my MIL to do one day at AK — and that’s before parking, food, souvenirs, etc.
ETA: we decided not to go and did Gatorland instead — under $100 for the whole day (tix, food, add-on experience, etc).

I would not buy the photo pass for a one day trip TBH. Most of our MK pictures are just okay but disney does not edit them and i don't feel like they are great shots. You may be able to just as easily find a random person to snap a photo of your family in front of the castle.
i do not think that there are discounts for one day tickets. I would do early morning magic if possible.
You could check Parksavers or Undercover Tourist for slightly cheaper tickets --- maybe even Tickets at Work if you have that option? But the one-day are the most expensive and least likely to be discounted.
If you just have one day, I'd recommend Early Morning Magic. We didn't do it at MK -- we did it at HS -- but you get into the park early and will knock Fantasy Land out quickly....It's a good way to maximize your time in the park....that way you can pull fastpasses for the mountains and ride Seven Dwarfs during EMM. The breakfast is OK, but you don't want to spend TOO much time eating during your limited time- definitely time it closer to 10am.
I'd skip the Memory Maker as well. It's so expensive that it's hard to justify it for just one day. You could probably buy a few photos for much less than the Photopass.
