I need some new ideas. Sunday: grilled chicken thighs with tzatziki, pita and hummus, cucumber and tomato salad Monday: Korean beef with rice and broccoli, edamame Tuesday: crockpot fajita chicken soup Wednesday: shredded pork tacos, mexi cauliflower rice Thursday: going out for my birthday!! Mexican and maragaritas! Friday: no clue. I want to do something fun since it’s the last day of school

I’m grilling chicken breasts, corn and zucchini tonight.
Tomorrow will be hot again, so probably grilling steaks with a salad
Rest of the week: tacos, pasta w/ meat sauce (from the freezer), TJs orange chicken or chicken tikka masala in the Instant Pot
Going SUPER easy because I have no fucks left -DH is grilling fajitas with a kit from TJs -boxed tomato soup & refrigerated cheese tortellini -TJs Baked ziti -TJs pup dogs (puff pastry wrapped hot dog) -chicken nuggets -ham & cheese quesadillas -out All served with raw fruit & veggies
Tonight- whole chicken with crunchy kale salad (it's the salad kit with cranberries, pumpkin seeds and poppyseed dressing. It's sooo good). The chicken is cooked in the air fryer. OMG, this is the easiest and tastiest way to make a whole chicken. It's way better than a rotisserie chicken, and cheaper.
Monday- Stir-fry (chicken breast, snow peas, onion, mushroom with Nom Nom Paleo stir-fry sauce) Tuesday- throwing leftover frozen chili in the crockpot Wednesday- Breakfast for dinner (eggs, bacon, artichokes) Thursday- Stir-Fry Friday- Taco Friday!!
It’s the last full week of school and therefore the busiest week in the world.
So.
Sun: Chicken parm, roasted veggies, pasta Mon: Korean beef bowls with leftover veggies Tue: probably out after a camp orientation Wed: English muffin pizzas Thu: crockpot sausage and peppers Fri: wine. Food optional. I’ll be too tired to care.

Our farm share has started. So many veggies already. I always enjoy the challenge.

Recipe for the chicken thighs?
Brown chicken thighs and remove to a plate. Deglaze the pan with 1/4c or so of white wine and let reduce a bit, add a can of cream of mushroom soup and half a can of water, add chopped carrots and mushrooms (fresh or canned). Stir together. Put chicken thighs back in the pan and cover. Let simmer for about 20 minutes or until the carrots and chicken. Are cooked through. Serve over egg noodles.
It’s such a basic “cream of crap” recipe, but it really is tasty and super easy.

Tonight we did chicken tacos with homemade pico de gallo...so good!!! I haven't decided on an order for the rest of the week but the meals are:
Ground chicken chili Grilled pork and asparagus Steak, cilantro lime shrimp, cous cous and a frozen veggie Korean chicken lettuce wraps
I am trying to have minimal red meat right now. It's just not sitting the best after my GB removal but I love steak. Haha.
I also have some frozen black bean and veggie burgers in the freezer and hot dogs for boys if we need something quick one night instead of the above. Oh and I usually just grab whatever dry seasoning that I am in the mood for when I grill.

isabel ,do you have a recipe for the Thai ground chicken dish? That sounds amazing.
It's from Pok Pok by Andy Ricker. I really can't recommend it highly enough. Everything we've made has been fantastic. If you end up exploring the book further, let me know and I'll fill you in on what we've tried.

Almost everything for this one can be sourced from a standard grocery store, but there are a few things that you'll need to find an Asian market for: Thai black soy sauce, dried thai chiles, and hot/holy basil. We usually use fresh green beans in place of the long beans because the Asian market isn't super convenient for us. I use Red Boat fish sauce, which you can buy at Whole Foods, but any fish sauce (even the stuff at the standard grocery store) is fine. I don't bother with the fish sauce-soaked chiles. The dish is plenty hot without it. You may consider dialing back a bit on the fresh and dried chiles if you're not a hothead. This can get tough to eat if you are sensitive to heat. It's so damn good though. A note on the holy basil - it can be hard to find fresh, even in an Asian market. We've had luck finding frozen cubes of it in the freezer section. This is especially nice because it means we pretty much have all the hard to find ingredients on hand at any given time, which means we can make it on a whim, like we did this week. Also note, the recipe as shown is for one person. Rather than making individual batches, I usually triple the recipe and use a pound of meat. It ends up being enough for me and DH plus a serving of leftovers. The fried egg with runny yolk is a must.
I know this is a lot. It's really not a complicated recipe, but mis en place is your friend. Get everything prepared and set aside so that when you're ready to cook, you can just grab and dump things into the pan (I use a large stainless steel pan for this; we don't have a wok). I don’t have all my dinners sorted this week, but I’ll probably have lots of leftovers, so I’ll just eat them instead.
-Red pepper spicy tomato soup -Buffalo chicken lettuce wraps -Peanut chicken in the crock pot served over rice noodles -Shrimp in a red curry coconut sauce over soba noodles
Going out twice this week: -Thai for hot and sour shrimp soup and Brazilian BBQ (it’s SO and my 2nd anniversary)
Monday: steak, baked potatoes, roasted green beans Tuesday: lemon garlic shrimp over zoodles Wed: leftovers Thursday: chicken marsala in the crockpot over mashed potatoes Friday: leftovers or brinner

Last night we had cheese and spinach stuffed chicken thighs, tonight is lamb curry (thanks to MIL). Tuesday: order out as we have a viewing at 6:30, so I won't be able to cook Wednesday: veggy soup Thursday: prawn and pasta thing Friday: some sort of stir fry
Last night we had a charcuterie board, we pretended we were fancy. Also some chips and spinach dip. Tonight we are having chicken Cesar salad. Tuesday-ground beef tacos Wednesday-tuna wraps Thursday-cheeseburgers and potato salad Friday-I'm not sure, we are going away for the long weekend on Saturday so something quick and easy.
