DH is working in Phoenix for the next several months and I'm going to take the kids out there in late August before school starts. He's in Scottsdale but we're planning on going to either Sedona or Flagstaff for the weekend. I know it will be hot as blazes in August. We're from the DC area so I'm used to heat and humidity but I really don't enjoy being outside in it.
Will it be too hot to do much outside in Sedona? We're not a really outdoorsy family but I do want to hike some. Kids are 16, 14 and 10.
It seems like Flagstaff is a bit cooler but it seems like a much smaller town. I've only been to Arizona once so I know nothing about the area.

Flagstaff isnt smaller than Sedona. It's the opposite actually.
In August, Sedona will still be hot although not as hot as Phoenix. Sedona is on the way to Flagstaff and is basically a day trip in my mind.
I'd stop there, eat walk around the town, then drive the scenic route and stay in Flagstaff where its cooler and the hiking is just as good.
This gives you the ability to see exactly how diverse the state of Arizona actually is. You get to see the desert around Phoenix, the oak forest and red rocks of Sedona and pine forests in flag. Not many states have such amazing diversity. It's pretty awesome.

I did Sedona in July with my daughter a few years ago - it was hot but not unbearable. We had the most amazing day at Slide Rock and just made sure to do as much as we could early in the day before it got too hot. Make sure you stay somewhere with a nice pool and you'll be set
