I’ve been bringing the premade salads daily. Cesar and Asian chicken have been my go tos.
Also leftovers of grilled chicken and veggies but reheated grilled chicken is always dry and requires too much chewing.
Today I have a meeting and they’re bringing in lunch so idk what it will be but it’s free and one of my rules for cheating on my eating plan. . I am following whole 30 m-f unless I have a work lunch, which is maybe once a month.
A can of soup with crackers today. Yesterday was a Stouffer's TV dinner. Last week was a bag salad kit. I'm in a lunch rut and just grab whatever is easy and fast.
Today was left over Arroz Con Pollo from our Mexican lunch Tuesday. I have found some amazing cranberry chicken salad with almonds at Aldi's that I have been brining on the 100 calorie buns. The best part is it comes in 4 individual serving sizes. Because left to me a tub of chicken salad that is supposed to have 5 servings somehow turns into 3.
I have also been doing the sheet pan meals. Chicken, peppers, onions, mushrooms, (any veggies you like, in the summer I will probably ad squash). Put it on a sheet pan with whatever spices you like and bake. Then I just cut it all up with my spatula and put it in individual container to grab for lunch.
I eat out pretty much daily. It is not a smart money move, but I hate packing a lunch and really need the excuse to leave my office. I'm probably going to get a beef/lamb gyro salad today.
I’ve been making roll ups using romaine leaves. I spread the leaves out over wax paper, put a little ranch dressing on (I’m not a mayo fan), Swiss cheese and deli meat - chicken or turkey. Then I roll it up in the wax paper and peel it back to eat it.
I also do taco salads a lot when I’ve made chicken in the crock pot. So shredded chicken cooked in salsa and taco seasoning with black beans and corn, and I put it over lettuce, tomatoes, cucumbers, cheese, maybe some avocado. If I have premade guacamole and no chicken, that works too.
Leftovers for me too! I’ve started putting a premium on stuff I can take as leftovers. This week, I’ve had pork chops and chicken & noodles.
I got a couple of frozen dinners from Eating Well, and omg. They are so good. Not particularly filling though so I would pack a piece of 45 calorie whole wheat bread if I brought one to work.
I brought some sort of frozen indian meal, but am not feeling it. It is also thunderstorming here. So we will see if I end up eating it or going out. I do like going out though, it gets me out of my office. Also we are mostly out of fresh food at the house, we are leaving to go up north for a week tomorrow, which means that lunch pickings were scarce this morning.
