If price isn't a concern, I'd go stay at the Post Ranch Inn in Big Sur. That said, I've never stayed there because price is a concern, haha. But friends have, and it just looks so lovely.
Other places that come to mind: The Ritz Carlton Half Moon Bay Ritz Carlton Bacara in Santa Barbara

One night, H and I were a little tipsy, and somehow decided that we would totally stay there for just two nights to have the experience, money be damned. Then I actually looked up the price the next day and nearly had a heart attack. So I'll be staying there never.
I'd look at the Wickaninnish in Tofino, British Columbia.

Post Ranch Inn is on the list. It’s crazy expensive but we wouldn’t have to fly but I read reviews and some people didn’t have good things to say. If I am spending 1600 a night, I need to have zero concerns. And it would be the most expensive hotel I have ever stayed out so I am questioning myself!
