I am doing my first half in a longgggg time. The race is 10/6. I kind of wasn't thinking when I signed up for this as we are doing a complete gut job on our kitchen around the same time. The last three weeks of training, I will be without a functioning kitchen. I don't want to plan to eat out for every meal as I want to maintain healthy eating leading up to the race.
Does anyone have any fairly easy, healthy meals/recipes that could be made with minimal effort and equipment? We will have a fridge, microwave, large toaster oven (it will fit a 8x8 dish), and grill. I may end up buying a single burner hotplate, too.
grill as much as possible! you can make sides either on the grill or in the toaster oven/microwave. Nuke a potato and finish it off in the toaster oven to get a baked potato. Trader Joe's makes great rices that you can cook right in the microwave in 3 minutes. Salads (though that might require more chopping and stuff). But for the most part, cook on the grill.
We lived by the grill when our kitchen was gutted. This is my go to recipe for summer, and I double or triple it to keep in the fridge for lunches and sides. I modify it and add frozen corn and black beans, and use quinoa instead of rice sometimes. Steamable rice packs make it super easy. I always add extra cilantro. You can basically put any veggies you want in this, I really like the very simple dressing. It also gets tastier over a few days in the fridge. You can grill a protein to put on top. I've also used Trader Joe's ready to eat marinated tofus on this and they're tasty.
