You will be able to book for each day of your trip at the 60 day mark, so if you are staying for 7 nights you'll have 8 days open up. I think if you are staying offsite you have to book each day separately starting at the 30 day mark.
If you want Slinky Dog Dash book it for later in your trip. Same with FOP. For MK definitely get 7DMT and the mountains. Peter Pan is a good option too since the line is never short.
I always stress about what time to book my FPs. Some people say it's best to get everything in the morning then you can book additional FP day of (if they are available), but I can never find what I want in the morning and that's when the lines are short anyway. I also like having FPs later in the day when things are crowded.

For any FPs you can't get for popular rides, those are the ones you plan to rope-drop. We have done that with Soarin' and Test Track. Also, watch the MDE app throughout the day to monitor wait times.
Another tip: Once you use your 3 FPs, you can go on the MDE app and reserve another FP (for rides with FPs available). I think once you've used your 3 FPs, you get one at a time (each person in your party) after that.
I like to start FPs around 10:00 because that's when lines tend to feel too long to me, plus we're generally ready to slow down and spend more time wandering the park, having snacks, taking breaks, etc... by that point if we've done an 8:00 rope drop.
MK Priorities: 7 Dwarfs Mine Train, Peter Pan, Space Mountain (might be too intense for your kid), Buzz Lightyear, Big Thunder, Jungle Cruise, Pirates
Epcot Priorities: Test Track (we rope drop Soarin' because TT is DS2's favorite ride), Spaceship Earth (late afternoon), and whatever else we can scoop up because we don't generally go to Epcot for the rides.
AK Priorities: Flights of Passage (obviously), Expedition Everest (almost certainly too intense for a 5 year old), and the shows
HS Priorities: Slinky Dog, Tower of Terror/Rock'n Roller Coaster (probably too intense), Star Tours, Indiana Jones show, and maybe the Disney Jr show if your kid really loves Disney Junior characters
For a 5 year old boy, I think I would go for these:
MK: 7 Dwarves, Peter Pan, Splash Mountain. Next: Big Thunder, Buzz Lightyear. My kids loved the Buzz Lightyear ride.
Epcot: Test Track (if he likes cars/if you think he will like the ride. My 4 year old HATED the ride and I was scared, but I'm a wimp on rides. My 6 yo thrill seeker loved it). WE hardly needed FP for anything else at Epcot but I would probably do Spaceship Earth and either Mission Space--green or Turtle Talk with Crush. RD Soarin.
AK: Flight of Passage, Lion King Show, Safari (I would skip Everest for that age unless he LOVES roller coasters. I would probably also skip Dinosaur b/c it's pretty scary)
HS: I would do Toy Story Mania ahead of Slinky Dog, but I seem to be the only one who feels that way. It might be better for your son, unless, again, he loves coasters. My 4 yo refused to go on Slinky Dog b/c we'd already done some larger rides by then and she did not enjoy them. Toy Story Mania is so fun. Star Tours we really liked. Not sure for the third one.

My 6 yo LOVES rides and is way better with them than I am. My 4 year old did NOT enjoy most of the bigger rides. She loved any of the rides that just go up and down around a central post, like the Triceratops Twirl at AK, and Dumbo & Magic Carpets of Aladdin at MK. Magic Carpets of Aladdin was her favorite ride.

It depends on the kid. My 6 year old cried on Flight of Passage but he is freaked out by 3D. I think FOP is less scary than soarin simply because your feet aren’t dangling. FOP is my 9 year olds favorite.
Flight of Passage is just amazing. You sit in one place on a base thingy but it rocks around a bit. It's like virtual reality flying, so you feel like you are flying and your stomach drops, and things pop out and are "in your way" so that's freaky, but it's super cool. If someone gets scared, they could always just close their eyes. It's awesome. The height limit is higher than most, though, so you may want to make sure he's tall enough.
It is kind of like Soarin' in a way but a lot more immersive.
7 Dwarves is a fairly tame roller coaster ride with some cute scenes of dwarves mining gems. It was less tame than I expected but more tame than most coasters. It's very popular with most little kids. It did scare my 4 yo but she liked the scene of Snow White at the end.

I’m glad you said this. This is what my TA said she will try to do soon (book for later in the day). And I never really see anyone say that so I was a bit worried. But I think conceptually it does make sense!
