Any idea what kind of weather we should be expecting? Shorts but no swimming? Swimming? Sweatshirt weather?!! We are going the last week of February and leaving on March 1.

Some crowd calendars, like Undercover Tourist, give historical or average temps. I just looked at UT, and it looks like highs are in the low-to-mid 70s for late February. Seems like it was similar to the temps when we were at WDW in early December. We mainly wore shorts and t-shirts, but also brought a few pairs of pants and long-sleeve shirts and sweatshirts for mornings/evenings and if one day was cooler. My kids went swimming, but low 70s is too cold for me for swimming (even though the pools are heated).
ETA: I started watching the 10-day forecast as soon as the first day of our trip showed up in the forecast. Then I started packing the weekend before, but made any packing adjustments a few days before. I definitely packed more clothes for this trip than other trips so that we had a variety to account for temp variations (including cool mornings/evenings) and layering.
We went last year the first weekend in February. Most days we could wear shorts but some days were a bit colder and drizzly. My kids went into the pool, which I thought was crazy. I sat poolside fully clothed.
So far that's my favorite week of the year to go there!
The weather can be anywhere from a nice warm to a little chilly. We've been in shorts and t-shirts and also in jeans and t-shirts/sweatshirts. My kids are in the pool at that time of year since they are heated.
We were there last year first week in March. We had some days in the 80s, and we had some days when we wore our down puffer coats and it was in the 40s in the morning. We thought it was always nice by mid-day and we had a couple days that were good for swimming.

Definitely could be either extreme, unfortunately. Makes it hard to pack since the weather could change on a dime. The Disney hotel pools are heated so people seem to swim in them regardless of the outside temp but the water parks will close if it gets cold enough.
That's also the time of year we see lots of people wrapped in the hotel bathtowels at the park
Most of my Disney trips have been in Feb. In my experience, there is a range of temps but usually at least a day or two when it's warm enough to swim (80s). Usually we still wear shorts and a t shirt during the day. Sometimes a sweatshirt for the morning/evenings. I live in the north, so anything feels warm in Feb though.
