Planning out itinerary for San Diego/Carlsbad trip in April for me, DH, and DS (9). It is our first trip to CA and while we have specific "wish list" items to hit I also want to build in time to enjoy the scenery.
Below is what I have so far. Any and all feedback is appreciated!
Sun: Travel day and check into Legoland hotel.
Mon: Legoland all day followed by Taco Stand for dinner and Moonlight Beach after. (Carlsbad hotel TBD - please rec your fave!)
Tue: San Diego Safari Park all day followed by Burger Bench for dinner. (Carlsbad hotel TBD - please rec your fave!)
Wed: Flower Fields in the am; GIA museum tour after lunch; followed by Campfire for dinner and Tamarack surf beach after. (Carlsbad hotel TBD - please rec your fave!)
Thu: Oceanview Mining then driving back to San Diego for a fancy dinner - maybe Ironside - and staying at the Omni for our last night.

Mon: Legoland all day followed by Taco Stand for dinner and Moonlight Beach after. (Carlsbad hotel TBD - please rec your fave!) As a heads up, this is a loooooooong day you've got planned. We did Legoland all day last month and it was the first time we didn't do dinner there because we figured it was closing early enough to grab dinner out of the park. Both my kids were so cranky and angry and hungry - and we just drove "across the street" to Burger Lounge. And they'd had ice cream around 3/4pm. Sometimes you underestimate how hungry you get running around them parks. Also, if you're talking about Taco Stand in Encinitas (based on the Moonlight Beach part) don't forget you'll be driving there during terrible San Diego rush hour traffic. So plan on that taking at least 30 minutes.

I know Campfire makes all these "kid friendly" dining lists. I have no idea who is making these lists, but we took my kids there and it is one of the least kid friendly places we have ever been. And my kids eat at fine dining establishments all the time. I think because they have a tent in the back they market it as great for kids? But my kids were like "ummmm it's a tent, what are we supposed to do with it?" And they hated the food. (Last night they had beef bourguignon for dinner, so it's not a matter of them only liking "kid food")[/i]
