Lunches — mix of leftovers and sandwiches
Mon: leftover bbq, potato salad, fruit or spinach salad on side Tue: takeout Wed: porcupine meatballs, green beans, pears Thurs: black beans over rice Fri: probably leftover or snack dinner

We have a veggie with each meal, I just decide the day of which veggie it is. (We're trying to do take-out a couple times a week to help support local restaurants.)
Lunches are leftovers or sandwiches, and some kind of fruit.
I don’t plan lunches. We keep the basics in the house for the kids and I eat dinner leftovers.
Chicken noodle soup Pasta and salad Salmon and rice with green beans Raviolini primavera Smokey sheet pan chicken and cauliflower Stir fry with beef and broccoli Shrimp and kielbasa saffron rice
I’m normally a planner even down to my lunches so this has been a nice break. I’m also trying to empty out my freezer of premade foods.
Some things I plan for upcoming meals are: Steak stir fry One pan balsamic chicken tenderloins and veggies (asparagus, carrots and cherry tomatoes) Tuscan bean soup from the freezer, biscuits from a tube Meatloaf from the freezer, mashed potatoes and frozen veggies Tilapia fillets, Brussel sprouts and baked potatoes
Lunches are just whatever. H is at work everyday but I’ve been eating leftovers, sandwiches toasted in my air fryer, the kids have had soup, Mac and cheese, etc.
Kids always eat very basic things for lunch. Cheese and crackers and fruit, hummus, peanut butter and crackers or sandwiches. DH and I eat what we find.
For dinners, we’ve been doing a bit of takeout here and there because my ability to cook is limited. The weather has been terrible this week, so we haven’t been grilling every day either. I plan some meals based on the weather.
So Saturday’s weather was great, so DH grilled steaks, I roasted veggies in the toaster oven, and threw baked potatoes in the Instant Pot.
Sunday was gross and we fended for ourselves. Kids had frozen chicken, fries, fruit and veggies.
I made Lasagna Soup from Skinnytaste in the Instant Pot, with some modifications. It was delicious, and it was enough for DH and I to have 2 meals each, then DH had a 3rd meal.
I’m still not planning down to the day, but trying to figure out ways to be creative with one burner, a toaster oven, and the instant pot!
